These kinda came together as a fluke … I was planning to experiment making a blueberry and banana muffin, but realized the kids had scarfed all the blueberries out of the fridge! So, this is what I came up with and they turned out wonderfully delicious! There is a combination of bananas, coconut, oats, strawberries and pineapple in these muffins. My son kinda named this recipe … although I’m not sure if strawberries are really considered an “island” fruit. 🙂
1 1/2 c. oats (I used an equal mix of quick-cooking and whole oats)
1 1/4 c. flour
1/2 c. white sugar
1 tbsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
1 c. diced strawberries
3/4 c. chopped fresh pineapple
2 ripe bananas, sliced
3/4 c. coconut
Preheat oven to 400º.
Combine oats, flour, sugar, baking powder and salt. Add in milk, egg and oil.
Stir just until dry ingredients are moistened. Fold in strawberries, bananas, pineapple and coconut.
Fill 12 muffins cups 3/4 full with batter. Sprinkle tops with sugar (I use organic cane sugar).
Bake 25 minutes. Cool on cooling rack. Enjoy!
